Shrimp Stirfry with Thai Chili Paste



It's been finals week, so I haven't had much time to cook or post on my blog. Actually, well, I have been cooking, but it's usually just very quick and sloppy stuff - throw everything in the pot, etc. etc.

This round of finals is actually not so bad. I think it's the senioritis talking here. In fact, I just learned a few days ago that next week was finals. Yea...I have a serious case of senioritis. I got it bad. Not that it really matters at this point. Though I won't rest easy until I hear from Jefferson.

Anyway...I did promise to find another use for the Nam Prik Pao I made before. I have some left over, and I know that when I move out, I'll probably have to throw it away. But it's such a shame...especially as this batch was one of my first blog posts too! But...I don't have time to search for a good recipe!

Solution: stirfry!

You can't go wrong with stirfry. It's literally the easiest (and if done right tastiest) dishes out there. Just fry and STIR! It's pretty cheap too...more cost-efficient than your Prime Rib or filet mignon. Perfect for a college student I think.

Shrimp Stirfry with Thai Chili Paste

Ingredients:

-1 lb Shrimp
-1.5 tsp cornstarch
-6-7 green onions, chopped roughly
-2-3 cloves garlic, minced
-3 shallots, sliced
-2 tbsp Nam Prik Pao
-Basil leaves (I didn't have this)

1. Coat the shrimp in cornstarch. This will make it crunchy.
2. In a medium saucepan, fry the garlic until fragrant.
3. Add the shallots and fry for about 1-2 minutes until it is slightly browned.
4. Add the white parts of the green onions to the shallots and allow to fry for another minute.
5. Add the shrimp and stir.
6. Finally, add the chili paste. Stir to combine.
7. Turn off heat and stir in fresh basil leaves.

Note: you can also substitute chicken or squid here. Beef, I'm not sure...but why not try it out?
